Mmm, popcorn

There’s nothing like fresh popcorn. I mean, REALLY fresh, recently popped popcorn. The smell of just one poprcorn machine wafts around and fills the entire circus tent, mixing with the smell of sawdust, of sugary candyfloss, of horses and giddiness and excitement, creating that unmistakable circus smell.
As a child, I used to spend loads of time in the circus shop, watching the popcorn machine and trying to work out the precise combination for the perfect popcorn - how much oil, corn, and salt and for how long, would result in the tastiest batch? It was strangely soothing to watch the hard, yellow corn kernels rumble in the machine and to listen as it popped and emerged in a flurry of fluffy whiteness.
We used to also love wrapping the popcorn in bits of candyfloss for a yummy mix of sugary saltiness and crispy softness. Needless to say, our parents were not too impressed with this cavity-inducing concoction. But next time you’re at a circus or fun fair you should definitely try it!
And did you know that the North and South of Ireland have totally different popcorn preferences? In the South, popcorn is served salty and in the North it’s served sweet.
And on the border? Well, you just have to serve both!
